Biography

Karen Weikel studied biochemistry and philosophy at the University of Scranton (Scranton, PA, USA) where she received a Bachelor of Science degree. At Tufts University (Boston, MA, USA), she studied Biochemical and Molecular Nutrition and received both a Master’s degree and Doctor of Philosophy degree from the Friedman School of Nutrition Science and Policy. Following completion of her postdoctoral fellowship at Boston University School of Medicine/Boston Medical Center where she studied cardiovascular complications of diabetes, she began teaching in the Natural Science & Mathematics division at Boston University’s College of General Studies. Karen’s research has been presented at several national and international conferences and published in peer-reviewed journals. It spans across several disciplines including ophthalmology, nutrition and cardiovascular health.


Research Interest

Karen’s research interests include human metabolism, specifically how it is altered by diseases of overnutrition such as type 2 diabetes.
